Varietal Composition: Xinomavro 80%, Chardonnay 20%
Vineyards: Selected vineyards in the hilly parts of the Amyndeo zone, where integrated farm assurance is applied.
Vinification: The grapes are being destemed and pumped into inox tanks for pre-fermentation cryo-extraction. The must is separated from the skins in a pneumatic press under very low pressure. Enzymatic clarification follows and the must is inoculated with selected yeasts. The slow temperature controlled alcoholic fermentation then follows in tanks equipped with automatic cooling system.
Wine description: A Xinomavro - Chardonnay blend. Delicate flower fragrances, with hints of citrus and yellow fruit in the nose. Vivid and pleasant freshness in the palate.
Wine and food pairing: Served at 10-12°C it is a perfect match for light seafood dishes, vegetable dishes and white meat.
